EASY POTLUCK RECIPIES...THAT ARE VEGAN TOO!

Need to bring a side to a party? We got two easy potluck recipes that will be the stars of the show!

 

We love this Watermelon Salad with Almond Feta and Strawberry Blueberry Dessert Parfait. These recipes are so delicious and straightforward! Plus they are vegan too – double win.

There is nothing better than juicy watermelon. This recipe is so refreshing and hydrating. You don’t have to make the Almond Feta but we recommend it! Keep in mind that you do have to make it one day in advance.

Watermelon Salad with Almond Feta

 

Almond Feta Ingredients:

 

*Make this one day in advance

 

1 C blanched sliced almonds

 

1/3 C water

 

2 tbsp lemon juice

 

1 tbsp olive oil

 

1 tbsp nutritional yeast

 

1/2 tsp sea salt

 

1/4 tsp garlic powder

 

1/4 tsp white pepper

 

 

How to Make:

 

  • In a high-powered blender, combine all the ingredients together until smooth

 

  • Pour mixture into a cheesecloth (we used paper towels - it turned out fine) and place in mixing bowl

 

  • Take the ends of the cloth or paper towel and tie it around a wooden spoon or something sturdy that will allow you to suspend it in the air. You don’t want it touch the bottom of the bowl.

    • Note: We didn’t have a spoon, so we semi-suspended our mixture by taping the ends of the paper towel up and over the side of the bowl. Since it wasn’t touching the bottom of the bowl, the excess moisture was able to leak out.

 

  • Place the bowl in the refrigerator for 24 hours.This will give the Almond Feta mixture time to set.

 

  • After 24 hours, remove the cloth and eat!

 

Who doesn’t love dessert? This Strawberry Blueberry Dessert Parfait is so good and easy to make it is ridiculous. There is little prep and cook time.

 

The fact that this parfait is red, white and blue makes it perfect for the 4th of July, Memorial Day or any cookout.

 

Strawberry Blueberry Dessert Parfait

 

Ingredients:

 

2 cups fresh strawberries

 

1 to 2 cups blueberries

 

1 can of soy whipped cream

 

How to Make:

 

  • Wash berries and slice the strawberries

 

  • Place strawberries in one layer in  a small, clear glass bowl or cup

 

  • Next, add whipped cream as you next layer

 

  • Repeat the strawberry layer.

 

  • Add blueberries on top.

 

  • Finish with a dollop of whipped cream
